At the heart of Salchicha Foods is fourth generation chorizo-maker, Humberto Raygoza who learned the secrets of artisenal, Mexican sausage making from his father and uncle in Zacatecas, Mexico.
Starting in 2013, Humberto, popularly known as The Choriman, made his love of crafting chorizo into an official business- -selling his chorizo door-to-door from a small, wheeled cooler. In the last decade, the business has grown into an award-winning, internationally recognized provider of authentic, Mexican chorizo.
A family owned and operated business, Salchicha Foods is the exclusive wholesaler of The Choriman chorizo. Humberto and his family, on behalf of Salchicha Foods, are grateful for the continued love and support of their community.

Humberto Raygoza is a fourth generation artisenal chorizo maker who learned the trade from his father and uncles in Mexico. His chorizo creations are world-reknown, but his favorite creation is his son, Emiliano (Milo) that he shares with his life partner, Vanessa.

Vanessa Rodriguez is at the center of all things Choriman and Salchicha. A grammy-winning, internationally reknown singer-songwriter, she brings the creativity and passion of an artist to the business of chorizo making.
