At the heart of Salchicha Foods is fourth generation chorizo-maker, Humberto Raygoza who learned the secrets of artisanal, Mexican sausage making from his father and uncle in Zacatecas, Mexico.
Starting in 2013, Humberto, popularly known as The Choriman, made his love of crafting chorizo into an official business- -selling his chorizo door-to-door from a small, wheeled cooler. In the last decade, the business has grown into an award-winning, internationally recognized provider of authentic, Mexican chorizo.
A family owned and operated business, Salchicha Foods is the exclusive wholesaler of The Choriman chorizo. Humberto and his family, on behalf of Salchicha Foods, are grateful for the continued love and support of their community.

Humberto Raygoza is a fourth-generation artisanal chorizo maker who learned the trade from his father and uncles in Calera, Zacatecas Mexico. In his spare time, he loves teaching Chorizo Making Classes, smoking a Cuban cigar, and creating new chorizo recipes.

THE CHORIWRANGLER
Vanessa Rodriguez is at the center of all things Choriman and Salchicha. A grammy-winning singer-songwriter, she brings the creativity and passion of an artist to the business of chorizo making. As she’s always on the go, it’ll take the guarantee of a damn good cup of coffee to get her to slow down. Hint Hint.

EL VERDADERO JEFE
Emiliano, (Momo, to some of you) wants you to know he’s more than just Humberto’s and Vanessa’s son. He’s an expert tomatillo peeler, can dance the New Zealand haka, and is not-so-secretly the one running the show. Accepts Hot Wheel cars & Cowboy hats in exchange for Chorizo.
